Apple and Peach Cobbler

Ingredients

  • 2-3 large apples
  • 2-3 large peaches
  • 1.5 cups sugar
  • 4 eggs
  • 1.5 cups bleached flour
  • 1.5 teaspoons baking powder
  • 4 ounces unsalted butter (1 stick)
  • 1/3 cup vegetable oil
  • 4 tablespoons brown sugar
  • 2 teaspoons cinnamon
  • olive oil spray or other spray to spray the baking dish
  • Powdered sugar (optional)

Tools Required

Preparation

1. Preheat oven to 330 F while you are preparing the ingredients below.

3. Melt the butter on the stove and then put in freezer to chill but not long enough to solidify                                                                                             
                                                                                       

4. Crack the eggs in a large bowl and start mixing them on high. Slowly add in the sugar as the eggs are mixed. Keep mixing until the eggs are of a creamy, thick, airy, and fluffy consistency. They will increase to approximately triple the volume. For me this takes about 7-8 minutes on high speed.


                                                                                                                                                                 

5. Add the chilled butter and the vegetable oil to the mixture and mix on slow speed to combine. This will be the last step requiring the mixer.




6. Sift the flour through a sieve to break up any lumps and aerate it. Mix in the baking powder with the flour.

7. Starting folding in the flour and baking powder mix into the egg mixture slowly to preserve the fluffy texture of the dough.



Use a spatula or another flat utensil to fold the flour in.


The final result:


8. Spray the baking dish with your oil spray. You can also just coat it with vegetable oil or butter if you do not have a spray.



9. Pour the mixture into the oiled baking dish and even out the mixture throughout.





10. Layer the apples and peaches on top of the mixture.




11. Sprinkle the cinnamon on top and layer with the brown sugar.


12. Put in the oven and bake for 45 minutes. Insert a toothpick to make sure it's done. The toothpick should come out mostly clean. IMPORTANT: Make sure you don't over bake because it's best to have this soft and juicy in the middle.





13. After it cools, sprinkle with powdered sugar. ENJOY!
